Rose veal osso buco slow cooked as described by the excellent Guardian cookery internet page – served with some fresh green runner beans and a porcini risotto seen to the right in the picture (although this was unnecessary and we think the meal only needed a few crushed potatoes with which to soak up the juices). The marrow was sweet and delicious eaten with some of the meat. The Osso Buco was bought from the excellent butchery counter at the highly rated Ludlow Food Centre in Shropshire.
